The medium frying pan by

The medium frying pan by Iwachu is a great combination of form and function! The finish is very smooth, the shape and size perfect for a two or three egg omelet.
The split handle works very well at reducing the heat level of the handle to allow for bare handed use using medium-high level heat.
The thermal properties are amazing, the heat spreads across the cooking surface fast and the heat is maintained well.
Amazing pan made with old-school
Cast iron and traditional methods.

This is my first Iwachu pan and will not be my last!

I researched a lot trying to decide what pan I should purchase. I'm completely inexperienced with making tamagoyaki or dashimaki tamago, but I have wanted to try for a long time. In my search for a proper pan I discovered this particular one was almost always the highest rated in list comparisons. I also love cast iron cookware. This brand has a nice history, which also added to its appeal. As soon as the pan arrived I washed and lightly oiled it. It took me a few days to work up my nerve to use it. While my first attempt at folding the egg wasn't great, the pan performed perfectly. I used a low heat, let the pan heat thoroughly, and kept it lightly oiled with each roll of egg mixture. If I hadn't know it was a cast iron pan I would have said it was ceramic - that's how easily the egg released! Amazing! I highly recommend this pan to anyone looking to buy one. It's truly a perfect pan!
